Potato Pancakes

I love making potato pancakes on a lazy Sunday morning. I cook my bacon in the oven because it is much less work. Sunday mornings should be easy!

What you need:

2 1/4 pounds russet potato, peeled
1/2 yellow onion, peeled
2 large eggs
3 tablespoons gluten free flour(I use Cloud-9 all purpose gluten free flour)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
pinch of cayenne
vegetable oil, as needed
3-4 ounces thinly sliced smoked salmon (optional)
4 tablespoon sour cream
1/4 cup fresh dill, chopped
