I thawed some ground beef out for supper last night but had no idea what I was going to make. I looked in my refrigerator and found quite a few left over items that needed to be used up and here is what I came up with. It turned out very delicious and one of the juiciest meatloafs I have ever made.

 

Here’s what I used:

Meatloaf

1 lb of ground beef

1/2 onion copped

3 avocados

1 cup of grated carrots

1/2 cup of french beans

1/2 cup of home made tomato soup

a dash of mustard

salt & pepper to taste

Topping

1 cup of home made tomato soup(see website for the recipe)

1/4 cup of sweet chili sauce

1 tbsp mustard

Here’s what you do:

Combine all listed ingredients for meatloaf

Place in a greased loaf pan

Mix topping ingredients

Make 3 long divots in the top of the meatloaf and pour the topping mixture into it

Cook at 375F for 1 hour

Drain off the liquid and let sit for 10 minutes

Serve with rice or a side of raw veggies
