Mac & Hummus

My son’s girlfriend is Vegan, and a very good friend of mine has Celiac so I am always on the hunt for recipes to accommodate both. I stumbled upon this little gem one day as I was craving mac & cheese but had no cheese. I did, however, have hummus so I thought….why not try it. It turned out great! Very tasty and creamy. Just a spin on the traditional.

Here’s what you need:

1.5 cups of macaroni(gluten free or regular depending on what the dietary needs are).

1 cup of red roasted pepper hummus(I use the Costco brand Sabra but you can use whatever brand and flavor you love).

2 tbsp of coconut milk or whatever type of milk you enjoy.

3 green onions chopped.

Here’s what you need to do”

  1. Cook your macaroni as directed
  2. Strain and put the macaroni back into the pot on low heat
  3. Add the hummus, milk and green onions & stir until blended well and heated thoroughly
  4. Serve alone or with a yummy salad. Enjoy!
