Blackberry Loaf

I had some blackberries hanging around in my fridge and threatening to go bad. I wasn’t in the mood for simply eating them so I decided to make a loaf. It turned out very moist and delicious. I would use this recipe with any berries you have on hand.
Here’s what you need:
1.5 cups of gluten free flour
1 tsp salt
1 tsp gluten free baking powder
1/8 tsp cinnamon(always check the label to make sure of no cross contamination)
1.5 cups of fresh or frozen blackberries
1 cup sugar
1/2 cups milk
1/3 cup butter melted
2 eggs
1 tsp lemon zest
2 tbsp lemon juice
Here’s what you do:
Preheat your oven to 350
Stir flour, salt, baking powder and cinnamon together in a medium bowl. Once Mixed add blackberries.
Whisk together sugar, milk, butter, eggs, lemon zest and lemon juice.
Add to flour mixture and stir until just blended.
Pour batter into a lightly greased pan.
Bake for an hour or until a knife is inserted and comes out clean.
Cool in pan for about 10 minutes and then transfer to a wire rack to cool for about an hour.
