Mac & Hummus

| My son’s girlfriend is Vegan, and a very good friend of mine has Celiac so I am always on the hunt for recipes to accommodate both. I stumbled upon this little gem one day as I was craving mac & cheese but had no cheese. I did, however, have hummus so I thought….why not try it. It turned out great! Very tasty and creamy. Just a spin on the traditional.
Here’s what you need:
1.5 cups of macaroni(gluten free or regular depending on what the dietary needs are).
1 cup of red roasted pepper hummus(I use the Costco brand Sabra but you can use whatever brand and flavor you love).
2 tbsp of coconut milk or whatever type of milk you enjoy.
3 green onions chopped.
Here’s what you need to do”
- Cook your macaroni as directed
- Strain and put the macaroni back into the pot on low heat
- Add the hummus, milk and green onions & stir until blended well and heated thoroughly
- Serve alone or with a yummy salad. Enjoy!
