I found a video on line that showed this quick and easy recipe. I decided to make it today for breakfast and was it delicious!
Here’s what you need:
1/2 cup of onion
1/2 of 2 different colored bell peppers
1/2 cup of ham(make sure it is gluten free)
1/2 cup of cheese
Here’s what you do:
Cut up onions, peppers, ham and grate cheese
Add eggs to baggie and shake to mix
Once eggs are mixed add the rest of the ingredients
Place in a pot of boiling water for approximately 10 minutes or until cooked
I added some avocado and tomato slices. You will be amazed at how the taste of the bell peppers are infused into the egg mixture. This is now a favorite recipe of mine. Nothing to wash up except your plate!
